After each level, for whatever reason, the game will take you to the store menu screen. Here you can buy upgrades and ingredients. The better the ingredients, the more money you can earn from each customer, the more food you can store, the more drinks you can prepare, etc.

Gems are precious premium currency and you can only earn a limited amount of them. Keeping the gems for upgrading kitchen equipment, upgrading cookie stores and other things can be seen as a task you really need. Upgrading the kitchen equipment will be the main way to earn money and move forward in the game, each upgrade requires some investment of gems, so you should save only some of them for this purpose.

You will prepare ingredients, take them off the grill, add toppings, serve customers and do it all over again. But it quickly becomes complicated. You're dealing with a lot of customers, and usually each of them asks for three items, which means you can usually only satisfy one customer at a time. But at other times, things move slowly and people will only order one item.
